ONE Table - Farm to Table 

Good food is not a luxury just for the upper-crust, and doesn’t have to be fancy; it can be as simple as a rich, hearty soup that warms you to the core on a chilly day; a fresh, crisp salad from the farm down the street and include the savoriness of high-octane bread. Bread made the way is used to be made with heritage grains and real starter. For those intolerant of modern baking, einkorn wheat makes up the pizza dough, bread and desserts that indulge your sweet tooth even though these delicacies are more digestible and free of sugar. Crunchy-veggie fans will delight to find all vegetables slightly undercooked, accentuating the emphasis on freshness.

Now back to the pizza; a hearty, nutty flavored einkorn crust provides a foundation for home-made sauces both white, red and pesto green; unusual toppings like squash, soft goat cheese, sliced tomatoes and fresh rosemary or basil, and you can select the typical; peppers, onions, mushrooms and whatever the chef can pull from the garden that day that exude bold flavors and add both sweetness and fire.


​The welcoming atmosphere is a stark, almost shocking contrast to the history of the building that housed the Blue Rooster; “best place to have a beer bottle broken over your head,” and the local food focused-farm-to-table trend that has swept the nation and has finally migrated to ‘Orphan’ County to inhabit the 512 Main Street location.

Inside, the look is simple, eccentric; walls adorned with Gretchen Rhodes and Brian Rosino’s food fashion art and graphic design as well as expansive, colorful abstracts by the former.

Mr. Rosino did not attend a cooking school with a farm-to-table focus or any cooking school for that matter and does not consider himself a chef or ‘foodie.’ He is has a masters’ degree in education with considerable research in nutrition. “I am just committed to the idea that clean, nutritious food is the first economy of any society. Food is either medicine or poison and I think people should enjoy a disease free, high quality of life.”
